Call them puff pastry cups, savory pies or whatever you want but let me tell you, this recipe is sooo good! At the bottom we have some fresh spinach, then we have vegan bacon, vegan cheese and some crunchy leek on top. With this recipe you’ll feel like a chef from the moment you’ll take these beauties out of the oven. Don’t you belive me? try them out yourself.

Ingredients

  • 275g (9.7 oz) puff pastry

  • 700g (24.7oz) frozen spinach

  • 80g (2.8 oz) vegan cheese

  • 80g (2.8 oz) vegan bacon (Food Evolution)

  • 30g (1.1 oz) leek

Method

  1. Cook spinach as shown on the package;

  2. Preheat oven to 200°C (400°F );

  3. Unwrap the puff pastry and using a pastry ring (8,5 cm/8,2 inch Ø) cut out 6 circles;

  4. Roll the remaining dough to 1 mm thickness using a rolling pin and repeat the same process until you have 6 more circles;

  5. Grease a cupcake pan* and lay a circle of dough over each cup. Press around the cup to form a bowl shape;

  6. Place inside each bowl, starting from the bottom, spinach, vegan bacon, vegan cheese and leek finely cut;

  7. Bake for 25-30 min until they are golden brown.

Notes

*For the greasing part I used olive oil. It’s optional but I highly suggest it.
