SMOKED BRUSCHETTA

Ingredients

  • 250g cherry tomatoes

  • 80g vegan pancetta*

  • Olive oil as needed

  • A pinch of salt and black pepper

  • Basil

Method

  1. Cut two slices of bread;

  2. Pour a drizzle of olive oil on a grill;

  3. Toast the bread for about 2-3 minutes on each side;

  4. Cut tomatoes in four pieces;

  5. Place them in a bowl, add a pinch of salt and a drizzle of olive oil;

  6. Stir and let it rest for a while**;

  7. Cook vegan pancetta as shown on the package;

  8. Place tomatoes on your toasts then add vegan pancetta;

  9. Grind pepper on your bruschetta and place some basil on top.

Notes

* Smoked TVP, seitan or tempeh can be used instead.
** So that the water will come out of the tomatoes.
