CHICKPEA FRITTATA

Just because you’re vegan it doesn’t mean that you can’t enjoy a good frittata. It’s tasty and packed with nutrients and that’s all you need to know to give it a try.

Ingredients

  • 360ml sparkling water*

  • 120g chickpea flour

  • 2 tsp smoked paprika

  • 1 tsp kala namak (purple salt)

  • 1 tsp dried basil

  • 1 tsp turmeric

  • 2-3 sundried tomatoes

  • 10ml olive oil

  • 165g vegan chicken

  • 50g spinach

Method

  1. Sift the flour in a big bowl;

  2. Add the spices (salt as well) and give it a good mix;

  3. Pour sparkling water;

  4. Using a whisk stir as long as all the ingredients are perfectly combined and there are no lumps;

  5. Steam spinach for around 15 min;

  6. Cook vegan chicken as shown on the package;

  7. Finely chop sundried tomatoes;

  8. Pour a drizzle of olive oil in a non-stick pan and once it’s warm enough pour the liquid mixture;

  9. Add spinach, tomatoes and vegan chicken;

  10. Cook covered, medium heat, 10 minutes each side;

  11. Once it’s ready let it rest for at least 5 min.

* It can be used also beer or still water
