CORNFLAKE CAKES

This little snack reminds me of my childhood and even though I’ve grown up I still appreciated it. It’s pretty simple to make and you’ll need just four ingredients. These cornflake cakes will satisfy your chocolate cravings.

Ingredients

  • 100g dark chocolate*

  • 15ml coconut oil**

  • 40g cornflakes

  • 10g pistachio

Method

  1. Roughly chop dark chocolate and place it a medium size bowl;

  2. Microwave it for 1 min or until it’s completely melted;

  3. Stir in coconut oil and make sure there are no lumps;

  4. Add cornflakes and stir until they are covered in chocolate;

  5. Using a spoon place the mixture in a muffin tray;

  6. Sprinkle some pistachio on top;

  7. Let the cornflake cakes rest in the freezer for at least 40 mins;

Notes

* Just make sure it’s vegan.
** It’s not essential but it will make the cakes extra crunchy.
You’ll get 6 cornflake cakes.
