“CHICKEN” CACCIATORE

Chicken cacciatore is a tradional italian stew. I managed to veganize this amazing classic. No body parts in here! Just some yummy vegan chicken. Let me tell you, my italian grandmother would be proud of me.

Ingredients

  • 165g vegan chicken*

  • 20ml olive oil

  • 2 cloves of garlic

  • 1 celery stalk

  • 1 medium onion

  • 2 medium carrots

  • 1 rosemary branch

  • 3 laurel leaves

  • 3 sage leaves

  • 150g tomato pulp

  • 40ml water

  • 2 tsp salt

  • 1 tsp black pepper

Method

  1. Finely chop celery, carrots, onion and sage leaves;

  2. In a non-stick pan, brown in olive oil the cloves of garlic until it becomes golden, then take them off;

  3. Add laurel leaves and rosemary branch;

  4. Sauté the veggies for a few minutes;

  5. Add vegan chicken and let it cook for around 10 mins, adjusting salt and pepper;

  6. Pour tomato pulp and give it a good stir;

  7. Cover the pan with a lid and cook on medium for around 15 mins;

  8. Pour water ocassionally;

  9. Remove laurel leaves and rosemery branch.

Notes

* TVP, seitan or tempeh can be used instead.
