CHOCOLATE DONUTS

I thought I didn't like donuts until today. I wanted to make something sweet but not too sweet that's why I came up with this recipe: vegan and sugar free.

Ingredients

  • 50g dark chocolate

  • 130ml soy milk

  • 250g all-purpose flour

  • 1 medium banana

  • 2 tsp baking powder

  • 1/2 tsp baking soda 

  • 90g peanut butter (ManiLife)

  • 1 Tbsp vanilla extract

  • A pinch of salt

  • 2 Tbsp cocoa powder

Method

  1. Preheat oven to 180°C (350 F) and lightly grease the donut baking pan;

  2. Using a fork, mash the banana in a mixing bowl;

  3. Add soy milk, peanut butter (ManiLife) and vanilla extract to the bowl. Stir until just combined;

  4. Add the flour, baking soda, cocoa powder and a pinch of salt then give it a good mix. Once you're done add baking powder;

  5. Using a pastry bag, pipe the butter into the donut baking pan;

  6. Bake for 10-15 mins, to make sure they are ready insert a toothpick into the donuts. It has to come out clean;

  7. While they cool down, melt the chocolate in a bain-marie, remember to add a drizzle of soy milk to get the perfect texture;

  8. Just pour melted chocolate on top of your vegan donuts. Allow them to cool for at least 5-10 mins.

Notes

The recipe is for 20 small donuts if you go for the normal ones you should get around 10.
