Ingredients

  • 100g chickpeas (canned)

  • 20ml olive oil

  • 2 tsp black pepper

  • 2 tsp dried basil

  • 10ml lemon juice

  • 1-2 strawberry

  • 4 tsp vegan ricotta

  • A few leaves corn salad*

  • 60g vegan bacon (Food Evolution)

Method

  1. Rinse and well drain chickpeas;

  2. In a small bowl add olive oil, lemon juice, black pepper and dried basil. Give it a good stir;

  3. Add chickpeas to the bowl and let them marinate for around 10 mins;

  4. In the meanwhile cook vegan beef as shown on the package;

  5. Cut strawberries into cubes;

  6. Now mix chickpeas, vegan beef and strawberries;

  7. Place them in four small cups;

  8. Add vegan ricotta on top and some corn salad.

Notes

* If you can’t find corn salad you can go for some arugula salad.
