Sometimes it is important to share also simple and quick recipes cause I believe veganism is not just about fancy food. With this chia pudding you could take your meal prep to the next level.

Ingredients

  • 50g chia seeds

  • 1 Tbsp vanilla extract

  • 1 Tbsp maple syrup*

  • 12 raspberries (4 each pudding)

  • 200ml Buddha drink classic (Happy Cashew)**

Method

  1. Add to a bowl Buddha drink classic (Happy Cashew), chia seeds, vanilla extract and maple syrup*. Whisk to combine;

  2. Cover the bowl and refrigerate overnight or at least 4-6 hours***;

  3. Now it’s time to get creative. I added some raspberries at the bottom and fresh apple mint and almonds at the top.

Notes

* You can add more or less according to your taste.
** You can use plant milk instead, I would suggest coconut milk because it’s usually creamier than the other plant milk.
*** The texture should pretty thick. If something goes wrong just add more chia seeds, stir and refrigerate for another hour.
